If you want the kind of sharp knife blade that will cut through ingredients with the utmost ease and precision, this set will do the trick. It features two interchangeable whetstone discs – fine (#3000 grit) and extra-fine (#6000 grit) – that affix to the roller of the HORL 3 knife sharpener, as well as a leather strop that clears any remaining inconsistencies.

To use, first sharpen and hone your knife with the discs that are included with the HORL 3 sharpener. Then simply unlock those discs and replace them with these finer grit stones. Set your knife on the magnetic angle support and roll the fine stone against the blade edge a few times, and repeat for the other side of the blade. Repeat the process, on both sides of the blade, with the extra-fine stone. Finally, stroke both sides of the knife blade along the surface of the leather strop a few times for a polished edge.
