    Croustade irons have been used for years in Scandinavia to make traditional crisp sweet and savoury pastry cups. The tool has now found a following among a new generation of modern British chefs for presenting fresh flavours and textures. To use, a croustade form is dipped in hot oil, then batter, and into hot oil again until golden brown to create shells that will hold a sweet or savoury mixture. The Netherton Foundry croustade batter form is produced on a lathe from a solid aluminium bar, which is hand polished to ensure each shell releases easily.
