This carbon steel slicing knife (22cm) is ideal for cutting large pieces of meat, creating wafer-thin slices. Part of our special collection with London-based Blenheim Forge. ---DETAILS--- Located in a small workshop under an archway in South London, Blenheim Forge is a jewel in Britain’s culinary landscape, beloved by chefs like Gordon Ramsey and Francis Mallmann. We collaborated on a collection of knives made with a core Japanese super blue carbon steel—known for its long-lasting durability and unparalleled sharpness—clad with rust-proof stainless steel until the edge of the blade for easier maintenance. It is notoriously difficult to forge super blue carbon steel, but Blenheim Forge has mastered it with their skill and attention to detail. Every knife has a comfortable, six-sided walnut handle that feels stable to hold and provides balance, attached with a beautiful copper ferrule. The wood is sustainably sourced from fallen trees in the M25 area by an enterprise that teaches joinery and furniture making to unemployed youth. The long and thin 22cm slicing knife blade is ideal for preparing meat, poultry, and other large cuts. (As with any Japanese-style knife, be careful to avoid strong, direct impact against bones, as that could cause the blade to chip.) ---BENEFITS--- ‘Anytime chefs walk into one of our stores, they beeline for these knives. It has what they love about carbon steel—the extremely fine cuts, how easy it is to sharpen—but requires less fuss.’
